Single Track Spirits

Family owned and operated on a farm outside of Cody, Wyoming, Single Track Spirits distillery is housed in a log barn built in 1925. During my visit with Ben and Natasha I was able to meet the newborn lambs and get the full experience touring and learning about their business. Between the history and the craft whiskey this is a true Wyoming gem. We were fortunate to have met them at a dinner some friends hosted and quickly made plans to visit with them and get a tour of their facility.
The History
Ben and Natasha are an amazing couple and were amazing hosts. I learned that Single Track Spirits was formed in 2011 when Tom Pedinger, Natasha’s Father, took his love of making whiskey and created the brand. He built the copper still inside the barn at his farm. It is an almost 100 year old log barn. From there he began distilling, barreling, aging, and bottling. He has since passed on the day-to-day activities to Ben and Natasha; however, they shared with me that he is still a part of all aspects and they consult heavily with him.
The Ingredients
Like many of the amazing local businesses in Wyoming, Single Track sources locally! They are devoted to local sustainable agriculture and source the grains, used to make the whiskey, from locals farms within 30 miles of the distillery. They also use water sourced from alpine snowmelt. Some of the local ingredients come from Byron and Powell in the Bighorn Basin. As they look toward expansion in the future, they are keeping an eye out for more farmers to get their ingredients from.
The Process
The barn is set up in an organized way that allows space for each step of the process. The whiskey is distilled in small batches and once distilled it is barreled into 53-gallon oak barrels that are charred. Ben and Natasha then store and age the barrels in their converted loafing sheds. Once aged, they are bottled and labeled then distributed.
The Whiskey
While I am not a whiskey super-fan, but I do enjoy tastings and analyzing the flavor profiles. Ben and Natasha gave me a tasting of two different whiskeys. The first was Batch 7 which Natasha described as having a bread-y and molasses flavor. I did enjoy tasting this one and I agreed with Natasha’s description of the flavor. The second Whiskey is the Summer 2020 batch. This whiskey is a Rye and has a peppery flavor with a sweet after taste.
Looking to the Future
Ben and Natasha have plans to grow the distillery in the near future. While we have to wait we are excited to hear their plans. Including different spirits, a tasting room, and a larger facility. Plans are in the works and we will keep you posted!
