Proud Cut Saloon- Cody, Wyoming

For over 35 years the Proud Cut Saloon has brought locals and tourists alike a cowboy steak dinner experience - their tagline is “Kick@$$ cowboy cuisine” after all. We felt this was a restaurant we couldn’t overlook while featuring the Big Horn Basin. So, we hit the road and headed to the Proud Cut Saloon. You can read the full history of this location here.
The Ambiance
The minute you walk in the experience begins. The aged hardwood floors set the tone for the cowboy and western experience. The impressive wood bar sits on the right with seating throughout the bar and dining area. The paneled walls feature local art for purchase and taxidermy mounts overlooking the space. If you walk down the hallway you there is access to the outdoor patio which is canvas walled.
The Bar
Again, the bar is impressive and frames a massive mirror featuring the Proud Cut name. The dark stained wood features cowboy detailing including horse shoes. Tracy was our bartender and she helped us choose drinks and starters. They have 12 beers on tap including Wyoming beer from Ten Sleep Brewing Company and Roadhouse Brewing Company. We always enjoy a local craft beer and loved seeing the local brew represented.
The Food
We started with the complimentary cornbread muffins with maple brown sugar butter and it is delicious. We ordered the cheese curds to start with and they come with ranch and caramel sauce - I know, I thought the same thing, caramel sauce with cheese curds?! Don’t bash it until you try it - the sweet and salty work. The French onion soup is served daily with a second chefs choice option each day. Every Friday is seafood bisque - it is fantastic. Steve ordered the prime rib sandwich with fresh horse radish and I ordered the spinach salad with steak. The salad comes with a warm bacon vinaigrette that is delectable. Our meal ended with the cinnamon French toast bread pudding with Jack Daniels Whiskey caramel sauce. Just go order it - you can thank me later.
The Chef
Chef Michael joined the Proud Cut Saloon about a year ago and we had the opportunity to chat with him. When we asked what he was most excited about he said the new menu and the changes and improvements that have come to the restaurant. For instance, removing the walleye and adding the rainbow trout and the bison ribeye. He said they’re working to bring more of Wyoming into the Proud Cut Saloon. Renaming the burgers and including local details like Pilots Peak Burger and the Rodeo Burger.
