Lisa, our sponsor and the owner of Wyoming Buffalo Company, is at it again and throwing us flavors of Wyoming from a local Wyoming spice company. Wild West Spice Company is a provider of amazing flavors and perfect spice blends for those looking to bring real Wyoming flavor to their menus.

About

Wild West Spice Company is a Wyoming based company that has blended high quality spices to create six amazing spice blends. From potatoes to vegetables and all of our favorite proteins, these blends compliment all of our favorite meals. In March we headed to Lisa’s store for the Wild West Spice Company’s ribbon cutting and tasting event. Let’s check out each blend and talk about how we love to enjoy them.

Hankerin’ Honey BBQ

We love this spice blend on chicken! If you have started to clean off your patio and prep it for spring and summer barbecues, be sure to grab this blend for making BBQ wings, grilled chicken breast or even a delicious pork chop! Here’s how you can use it:

Dry rub: Pat proteins dry, season with salt and pepper and dry rub seasoning into protein.

Marinade: Place protein in plastic bag or glass bowl drizzle with olive oil, season with salt and pepper and spice blend. Mix then allow to rest and marinade for a minimum of 30 minutes and maximum in the fridge overnight.

Prairie Potato

This is spice blend we have used camping! Spice up your mashed potatoes, sprinkle onto baked potatoes or make delicious potato wedges. One of our favorite ways to use this spice is in our skillet potatoes. Here’s how you can make them two ways:

Wedges: Cut potato in half long way and then slice each half into wedges. Place wedges in a bowl and pour olive oil and toss in spice blend. Place evenly on sprayed sheet pan. Bake in oven at 400 until lightly browned. Approximately 30 minutes, but watch closely as each oven differs.

Skillet potatoes: Dice potatoes and place in a bowl. Pour olive oil and spices to taste and toss, distributing the seasoning evenly on the potatoes. Heat cast iron skillet until hot and drizzle olive oil. Once oil is hot, add potatoes. Stir occasionally. When browned to desired doneness remove from pan. Serve hot. (These are great for breakfast potatoes, burritos, and dinner sides.)

Stampede Salsa Mix

Making your own salsa and salsa flavored dips has never been so easy. We love the flavors of this dip and really enjoyed it with a sour cream base. This spice can be used in many different ways. Here are two recipes we think you will enjoy:

Salsa Creme Dip: 8 oz of sour cream and seasoning to taste. We think 1/4 cup is a good amount, but use less for less spice or more for more spice. Add texture with freshly diced tomatoes, onions, and/or jalapeños. Allow to chill for 30 minutes before serving.

Crockpot Salsa Chicken: Place chicken (2-4 breasts frozen or fresh) in crockpot. One can of chicken stock, one can of diced tomatoes and 1/2 cup of Stampede Salsa Mix. Cook on low for 6-8 hours or until done. Shred chicken and serve over rice or in a tortilla.

Sunset Shaker

This spice blend is absolutely delicious. I have never had a blend like this and truly cannot get enough of it. Lisa served it on broccoli at the tasting event and everyone raved. There is a slight spice to this blend so adjust to desired flavor. We think this will be outstanding on grilled asparagus.

Oven roasted: Preheat oven to 400. Toss vegetables in olive oil and evenly sprinkle or toss vegetables in spice. Spread evenly on sprayed baking sheet. Bake for 15-25 minutes depending on how you prefer your vegetable doneness. Serve immediately.

Grilled: Prepare vegetable by tossing in oil and spices. Preheat grill on medium to medium high heat. Grill until desired doneness. Serve immediately.

Wyoming Steak Rub

This spice is easy to work with and the flavors are so well balanced. The perfect blend of spice balances so well with any cut of grilled Wyoming steaks. Season your steak as desired before throwing it on the grill and you’ll have the perfect steak to pair with your Wild West Spice Company seasoned sides.

Cowboy Cajun

Just because we are in Wyoming doesn’t mean we don’t love the iconic American Cajun flavors. So, how does Live WYld cook up Wyoming Cajun fusion food? With a Steelhead trout fish fry of course! We have the full recipe here. But essentially we blended our own fish fry breading and made some delicious sides. Then we fried up perfect filets of Wyoming trout.
